A Delicious Low Carb Meal: Santamaker's Spicy Chicken






This is the meal that I make when I only have 5 Minutes to prepare a delicious low carb meal. Of course it takes about an hour, but I can be busy doing all kinds of fun and creative things while it cooks and the oven does all of the work.





The basic recipe only calls for chicken breast, Rotel sauce ( I like it hot, you might want to use the regular), salt and pepper.

Pour half of the sauce in a oven proof container, place chicken on top, salt and pepper it, then pour remainder of sauce on top. Cover and cook at 350 for about an hour. The longer, the more tender...


I have added to the meal by using a can of black beans (optional, it adds about 15 carbs. but worth it.) I add it first, then the sauce and chicken.

Okay, you can have it either way, it's delicious.


You can add sourcream, cheese and salsa after the chicken is done. It only adds an extra 4 carbs. and OHhhh so delicious.

I made rice for hubby since he doesn't need to watch his carbs and he loves it, since there is so much spicy sauce .












Here is my plate, I just used mixed greens and mushrooms.








I didn't take a picture, but I ended up putting some sour cream, cheese and salsa on top of mine and it was fantastic.
